Serves: 4
5 Cups of water*
1 Brown onion diced
3 garlic cloves minced
2 Celery sticks diced
1.5 Carrots chopped
4 Broccolis chopped
1/2 Cup of soaked cashews
Salt and Pepper
Fresh Parsley to garnish, edanames for some textures and side of veggies if you like (optional)
ADD water and all the veggies (except for broccoli) to a large pot on a medium to high heat
COOK them all until they start to get tender
ADD the chopped broccoli to the pot
COOK until broccoli is tender, approximately 10 minutes
ADD everything, including the water to the blender and blend them well
ADD the soaked cashews to the blender with the veggies and blend until you create the most beautiful and delicious creamy soup! Add salt and pepper to taste
Once all the veggies are well combined and transformed in to a beautiful and delicious cream, cook on low heat for about 5-10 minutes or until warm.
GARNISH with parsley and edanames
SERVE with a side of veggies

Feel free to add more or less water depending on how thick you like your soup!
